Nerds candy + gelatin + air = marshmallows made from Nerds. If you've been following along the "Will it Marshmallow" series, you'll know you can make marshmallows from gummies and other candy.
So far we've done things like: jolly rancher marshmallows, peach ring marshmallow rice crispy treats, gummy shark marshmallows, gummy bear marshmallows, peach ring marshmallows. The Nerds melt into a syrup that you combine with gelatin to whip into marshmallows.
Fair warning - these taste absolutely horrible and I would not recommend them. If you are looking for a more flavorful, candy like marshmallow I would recommend the jolly rancher marshmallows. The nerds also smell very strongly and unpleasant when melting.
Ingredients
This is a basic recipe. I choose to use the rainbow Nerds candy because it was available on Amazon for a fairly decent price (12 movie theatre sized boxes for $15) and I wouldn't have to open a ton of little boxes. Using this mixed flavor box with the various colors resulted in a dull brown color and generic fruity flavor. If I were going to do it again, I'd suck it up and open a bunch of little boxes like these grape or strawberry ones to have a non brown color and uniform flavor.
- Unflavored gelatin
- Nerds candy (you'll need 8, 5 ounce boxes)
- water
- powdered sugar if wanting to dust them post cutting

Video Instructions
- Unbox nerds candy and weigh out the proper amount.
- Put them in a medium sized pot over medium heat along with one tablespoon of water.
- After the Nerds candy becomes liquid, bring it to a boil for 5 minutes or candy reaches 310F. After the boiling stage, allow candy to cool for 5 minutes.
- Bloom gelatin while the Nerds are melting.
- Combine melted Nerds and gelatin.
- Mix on high for 10 minutes in a 5 quart planetary mixer.
- Pour into a prepared pan and let sit for 12 hours, undisturbed.
- Cut into squares.
- Toss in powdered sugar.
Hint: You need to bring this mix to a boil because the main ingredient in Nerds is dextrose - a sugar with a melting point of 303F. During the melting of the candy, you'll notice a bunch of small clear squares that look like large flakes of salt. This is the dextrose.

For these marshmallows made from Nerds, you'll need:
- medium sized pot
- planetary mixer with wire whisk attachment
- 8 x 8 baking pan (like one you make brownies in)
- parchment paper
- spatula
- knife
- cooking spray
- candy thermometer, optional
Storage
Store marshmallows in an airtight container. Shelf life is approximately 3 months.
Top tip
Tossing these marshmallows in powdered sugar after cutting will keep them from sticking to each other.
Nerds Candy Marshmallows
Equipment
- 8 x 8 square baking dish
- medium size pot
- candy thermometer optional
Ingredients
Gelatin Bloom
- 40 grams unflavored gelatin
- 200 grams cold water
Syrup Slurry
- 1133 grams nerds candy 8 , 5 ounce bags
Other
- 100 grams powdered sugar for tossing marshmallows
Instructions
- Prepare an 8 x 8 baking dish by lining it with parchment paper and spraying the parchment paper with cooking spray. Set aside.
- Weigh out the correct amount of Nerds candies and place them in your medium sized pot. Add one tablespoon of water.
- Melt over medium heat in a medium sized pot. Stirring every now and then to distribute heat.
- While the nerds are melting, bloom your gelatin.
- Bloom gelatin by whisking together 200 grams of cold water with 40 grams of unflavored gelatin in the mixing bowl of a 5 quart planetary mixer. Let it sit, undisturbed, until nerds are melted.
- Once nerds are melted, turn heat to high. You will still see large clear grains of dextrose. Boil for 5 minutes, stirring constantly.
- After boiling, turn off heat and allow melted candy to sit for 5 minutes. After 5 minutes, pour the melted candy directly on top of the gelatin.
- Turn the mixer on low for 30 seconds to combine the syrup and gelatin.
- Increase the speed to high and let it mix for 10 minutes.
- Turn off mixer. Pour nerds marshmallows into prepared pan.
- Place another piece of oiled parchment paper on top of the marshmallow, creating a seal.
- Let nerds marshmallows sit for 12 hours undisturbed before cutting.
- After 12 hours, oil a sharp knife and cut marshmallows into desired size. 2" x 2" is recommended.
- Toss marshmallows in powdered sugar.
- Store in an airtight container.
