    Gummy Skittles Marshmallows

    Sour Gummy Skittles + gelatin + a little extra water + air =sour skittles gummies marshmallows. If you've been following along the "Will it Marshmallow" series, you'll know how to make make marshmallows from gummies, along with things like: peach ring marshmallow rice crispy treats, gummy shark marshmallows, swedish fish marshmallows, and of course, jolly rancher marshmallows.

    When did sour gummy skittles come out?

    Sour Skittles Gummies are hit shelves in 2022 and 2023! The bag has sour strawberry (red), orange, sour lemon (yellow), sour green apple (green), and sour grape (purple). The sour skittles gummies ingredients are:

    INGREDIENTS: CORN SYRUP, SUGAR, MODIFIED CORN STARCH, GELATIN FUMARIC ACID; LESS THAN 2% OF: LACTIC ACID, CALCIUM LACTATE, CITRIC ACID, MALIC ACID, NATURAL AND ARTIFICIAL FLAVORS, COLORS (RED 40, YELLOW 5, YELLOW 6, BLUE 1).

    These are sour because of the citric acid and malic acid. It also causes the marshmallows to be very soft!

    Ingredients

    This sour gummy skittles marshmallows recipe is a basic recipe.

    • Unflavored gelatin
    • sour gummy skittles (you'll need 1100 grams, this is a lot! It's seven of the linked bags)
    • water
    • powdered sugar to dust them post cutting

    1. Open your candy!
    2. Put them in a medium sized pot over medium heat with 200 grams of water.
    3. Bloom gelatin while the sour skittles are melting. This will take 30 minutes.
    4. Combine melted candy liquid and gelatin.
    5. Start with turning mixer to LOW and very gradually increase the speed until you get to high without having the mixture splash. Mix on high for 10 minutes in a 6 quart planetary mixer.
    6. Pour into a prepared greased pan and let sit for 12 hours, undisturbed.
    7. Cut into squares.
    8. Toss in powdered sugar.

    Hint: melting the sour gummy skittles around 30-40 minutes and should be done on low - medium heat. There will still be small pieces of the gummies that do not melt. This is okay!

    For these you'll need:

    • medium sized pot
    • planetary mixer with wire whisk attachment
    • 8 x 8 baking pan (like one you make brownies in)
    • parchment paper
    • spatula
    • knife
    • cooking spray

    Storage

    Store marshmallows in an airtight container.

    Top tips

    Tossing these marshmallows in powdered sugar after cutting will keep them from sticking to each other.

    You must grease the parchment paper before pouring marshmallow on it.

    Equipment

    • 5 quart planetary mixer
    • 8 x 8 square baking dish
    • parchment paper
    • cooking spray
    • spatula
    • medium size pot

    Ingredients
      

    Gelatin Bloom

    • 20 grams unflavored gelatin
    • 100 grams cold water

    Syrup Slurry

    • 1100 grams swedish fish
    • 200 grams water

    Other

    • 100 grams powdered sugar for tossing marshmallows

    Instructions
     

    • Prepare an 8 x 8 baking dish by lining it with parchment paper and spraying the parchment paper with cooking spray. Set aside.
    • Open your sour skittles gummies.
    • Melt skittles gummies and 200 grams water on low - medium heat in a medium sized pot.
    • While the Skittles gummies are melting, bloom your gelatin.
    • Bloom gelatin by whisking together 100 grams of cold water with 20 grams of unflavored gelatin in the mixing bowl of a 6 quart planetary mixer. Let it sit, undisturbed, until sour skittle gummies are melted.
    • Once sour skittles gummies are melted, pour the syrup over the gelatin.
    • Turn the mixer on low for 30 seconds to combine the syrup and gelatin.
    • Increase the speed to high SLOWLY - mix will want to jump out of the bowl. Once on high let it mix for 10 minutes.
    • Turn off mixer. Pour marshmallows into prepared pan.
    • Place another piece of oiled parchment paper on top of the marshmallow, creating a seal.
    • Let sour skittles marshmallows sit for 12 hours undisturbed before cutting.
    • After 12 hours, oil a sharp knife and cut marshmallows into desired size. 2" x 2" is recommended.
    • Toss marshmallows in powdered sugar.
    • Store in an airtight container.
