Cosmic brownie candy bars, could the inner child in you be anymore thrilled? These bars use a box brownie mix as the base and are covered with a dreamy, homemade dark chocolate ganache.

Timeline to make cosmic brownie candy bars
These candy bars come together relatively quickly in terms of all candy bars. It's important to let the brownie cool to the touch before putting the ganache on it and then allowing the ganache to set up completely before cutting into bars.

I followed the instructions on the back of the brownie mix and cooked them in a 9 x 13" pan lined with parchment paper. My favorite boxed brownie is the Ghirardelli brand brownies, especially the dark chocolate version!
Ganache for cosmic brownie candy bar tips
- Don't use chocolate baking chips. Bars chopped into pieces will work best for this.
- Heat your heavy cream and corn syrup for 90 seconds in a microwaveable safe container. Once it's hot, pour it over your chopped chocolate and let it sit for at least a full minute.
- Stirring slowing, stir until it forms ganache.
Assembling cosmic brownie candy bars
- Make brownies.
- Make ganache.
- Make brownies and let them cool.
- Make ganache. Put it directly on top of the brownies while it is fluid. Let the ganache set up. You can put it in the fridge.
- Cut candy bars into desired size.
- Bottom the candy bars in chocolate. Brush the off with your hand to remove excess crumbs before bottoming.
- Bottoming the candy bars keeps additional crumbs out of your dipping chocolate. It also makes fork dipping easier.
- Clean up sides and lines of chocolate, if desired. This is done by taking a small sharp knife and running it around the long sides of the candy bar to trim excess hardened chocolate, giving the candy bar very clean lines.
- Fully dip candy bars. Allow chocolate to set before handling again.

Cosmic Brownie Candy Bars
Equipment
- 9 x 13" pan
- oven
- microwaveable safe dish
Ingredients
Brownie Layer
- 1 box brownie mix mix as prepared in directions
Ganache Layer
- 650 grams dark chocolate, chopped into pieces
- 250 grams heavy cream
- 100 grams corn syrup
Chocolate for dipping and decorations
- 2 lbs tempered dark chocolate or chocolate flavored candy melts
- 100 grams rainbow chip sprinkles
Instructions
Brownie Bottom
- Mix brownies as instructed on box. Spread in a single layer in a 9 x 13" sheet pan lined with parchememt paper. Bake for 15 minutes.
Ganache Layer
- Chop chocolate into small pieces. Set aside.
- Combine heavy cream and corn syrup in a microwaveable safe dish. Heat in the microwave for 90 seconds or until mix is very hot.
- Pour hot cream and corn syrup over top of chopped chocolate. Let this sit undisturbed for 60-90 seconds.
- Stir slowly until ganache forms.
- Spread over top of brownies. Let ganache sit undisturbed until it is set up and can be cut without flowing. You can put bars in the fridge if you'd like to speed this along.
Cutting and dipping.
- Cut bars intl 1" x 3".
- Bottom bars in melted chocolate. Place on parchment paper and allow it to set up before completely dipping.
- Fully dip bars in chocolate. Sprinkle with rainbow chip sprinkles.
