Homemade brown sugar cinnamon pop tarts using pie crust

Brown sugar cinnamon poptarts are a breeze using refrigerated pie dough. Making Pop-Tarts with refrigerated pie crust is a simple way to use up extra pie dough you have.

Ingredients
  

Pie Crusts

  • 2 9 inch pie crusts storebought is great!
  • 1 tablespoon butter melted

Brown Sugar Filling

  • ½ cup dark brown sugar
  • 2 tablespoon flour
  • 2 tablespoon cinnamon this is a heavy amount of cinnamon. If you like a lighter cinnamon taste, reduce to 1 tbsp.
  • 1-2 tablespoon butter melted. Filling should be slightly like coarse mildy damp sand.

Brown Sugar Glaze

  • ½ cup powdered sugar
  • 1 teaspoon cinnamon cinnamon should make icing light brown
  • 1 tablespoon warm water

Instructions
 

  • Preheat oven to 350F.
  • Mix together brown sugar, flour, cinnamon, and melted butter. Set Aside. Filling should be mildly damp like a not very wet sand. Butter amount may need to increase if your brown sugar is dried out.
  • On a parchment lined baking sheet, place one, round, 9' pie dough crust.
  • Spread 1 tablespoon of melted butter on pie crust.
  • Place filling mix on pie crust, leaving a 1" circle perimeter on the outside of crust uncovered. With a gentle but firm hand, press filling into pie crust.
  • Place second pie crust directly on top of first. Press the edges together. Crimp edges using a fork.
  • Bake for 20-25 minutes until golden brown. Check after 10 minutes to see if you need to rotate your baking sheet for even browning.
  • Cool for 1 hour before frosting and cutting.

Cinnamon Glaze

  • Combine ½ cup powdered sugar, 1 teaspoon. cinnamon, and 1-2 Tbs. water. Mix until fluid, but glaze should not be runny. Pour over top pie crust. Allow to set up before cutting.
  • Cut and enjoy!
