Brittles, toffee, and hard candy all fall into the same category for confections. Technically they are called "noncrystalline" confections, but I like to think of them as candy that will crack your teeth if you don't make them correctly. To make all of these different sweets, you first start by dissolving sugar in liquid and then boiling until the correct amount of water has been removed. The other ingredients and amounts of ingredients is what will turn one into a brittle, one into toffee, or one into hard candy!
