Homemade Reese Cup Pie

One huge, 3 pound reese cup.

Equipment

  • 9 ' pie plate
  • 9 ' round air fryer liner
  • 5 quart planetary mixer with paddle attachment
  • large pot for creating a hot water bath
  • candy thermometer for chocolate tempering

Ingredients
  

  • 360 grams Peanut Butter
  • 56.5 grams Butter
  • 360 grams Powdered Sugar
  • 1.5 pounds Milk Chocolate
  • .5 cup Mini Reese cups optional for decoration
  • .5 cup Reese Pieces optional for decoration

Instructions
 

Peanut Butter Center

  • Combine peanut butter and butter in the bowl from a 5 quart planetary mixer. Set aside.
  • Fill a large pot big enough to place the mixing bowl inside of it with room around it ⅓ of the way full with water. Place the mixing bowl with peanut butter and butter inside of the pot with water surrounding it. Heat on high until peanut butter and butter is fluid. No water should enter the mixing bowl.
  • Very carefully, remove the mixing bowl from the water bath (it's hot!) and place it on the stand mixer.
  • Using the paddle attachment, add in powdered sugar until combined.
  • Press peanut butter filling into a pie plate lined with a 9" air fryer liner. Let set up.
  • Using a 8' tart pan, cut a circle into peanut butter filling. Remove excess peanut butter filling around sides. Set circle aside while melting (tempering if desired) chocolate.

Assembling Peanut Butter Cup

  • Prep another pie plate with a new air fryer liner.
  • Temper milk chocolate. Pour ½ of you chocolate into the bottom of a new airfryer liner.
  • Press peanut butter circle into chocolate.
  • Top with remaining chocolate. Decorate if desired.
  • Refrigerate until firm.
